Method
Stir the sugar into the lemon juice until the sugar is fully dissolved. Mix in the gin and tonic, place into a shallow tray in the freezer. Stir with a fork every 20minutes until crystals start to form. Once the mix is fully crystallised, transfer to a lidded container in the freezer until ready to serve.
