- 40g Glucose
- Juice of 7 Limes
- 30g Butter

Ingredients
Method
Melt chocolate in a bowl over bain marie until melted. Set aside.
Place the cream glucose and lime leaves in a pan and bring to the boil. When mixture has boiled add the lime juice to the cream mix. Pour the cream mix over the melted chocolate and whisk in butter. Leave at room temperature to set for approx 1 hour. Soften the mix, place in a piping bag. Pipe into logs, dip in chocolate.
