el bulli inspired chocolate truffle


  • 235g bitter chocolate (A)
  • 310g milk chocolate (A)
  • 350g single cream (B)
  • 110g lime juice (C)
  • 35g trimoline (D)
  • 35g butter(soft) (E)
  • grated rind 8 limes (F)
  • 500g bitter chocolate for coating (G)
  • little more lime zest (H)


scald (A)+(B) @60C
add (C), then (D). cool to 32C, then add (E), stirring until melted.
fold in (F) taking care not to add any more air.poor into a small flat tray. cool.
cut to desired size/shape.
coat in (G) tempered and at room temperature, sprinkling with a little (H) before the chocolate hardens.
