Marco''s white chocolate sorbet recipe

This is from marco's book 'white heat', but I still use it, not found a better one ( except for pacojet one)

Ingredients

  • 6oz white chocolate.
  • A 1/4 pint noilly prat (vermouth).
  • B 1tbsp vodka. B 18fl oz water. (warm)
  • C 1/3 pint stock syrup.
  • D Finely grated zest of 1 orange.

Method

Melt A over water, add B and stir til incorporated. Stir in C, then stir in D. Chill, then churn.
