- 250g caster sugar
- 50g glucose
- 1/2 vanilla pod, seeds

warm 30ml water with agar dont mix just leave agar ontop of water
bring 100ml water, sugar and glucose to boil med heat and cook till 140oc
whisk egg whites to firm, slowly add the sugar mix and continue to whisk, add vanilla seeds.
bring agar mix to boil and cook for 1 minute mix so no lumps and fully incorporated
and add to meringue mix
place into tray and fridge to set
