Ingredients

  • 600g granulated sugar
  • 3 egg whites
  • 35g gelatine, soaked in cold water

Method

place suagr in pan with 125ml water and boil to 140'C
whisk egg whites to firm peak
pour sugar water onto egg whites
add gelatine
mix together and turn out onto a tray dusyed with cornflour and dust with more cornflour
cut into pieces and roll in icing sugar and cornflour mixture
