in another pan heat water, vinegar and salt

Ingredients

  • skate wings, cut into 125g portions (3-4oz)
  • 1 litre water
  • 125ml white wine vinegar
  • salt
  • caper sauce
  • 2 egg yolks
  • 500ml water or fish stock
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • pepper
  • salt
  • 3 tbsp butter
  • 2 tbsp flour
  • 4 tbsp capers

Method

place skate wings in pan,
in another pan heat water, vinegar and salt
bring to the boil and pour over skate wings
bring back to the boil, cover and take off the heat, keep warm
for the sauce mix egg yolks, lemon juice, olive oil and pepper
add flour and stir over heat
add water/stock bring to boil
take off thinckened sauce, stir in capers and check seasoning
place skate on a plate and ladle sauce over half the wing
