- 16 eggs
- 500g flour
- 300g cocoa powder

mini cocoalte muffins for petit fours
served these as petit fours at rhodes south. Best made fresh for every service used little silicone moulds.
Ingredients
Method
Cream butter and sugar together until pale and fluffy.
Beat in the eggs one by one.
Sieve in the flour and cocoa powder and fold into the mix.
Pipe into the muffin cases putting a few chocolate chips half way through.
Cover with more mix.
Bake 160oc for 8mins
Remove from oven sprinkle on a few more chocolate chips.
Allow to cool to room temp
