  • 1tsp vanilla extract
  • cheesecaker
  • 1kg Philadelphia
  • 600ml double cream
  • 100ml milk
  • 200g sugar
  • juice and zest of 4 lemons
  • topping
  • 250g egg white
  • 400g sugar

Method

base
Mix altogether and press into rings
cheesecake
Beat all the ingredients together until thick
Spread evenly over the bases and smooth over chill 30 mins
Spread with thick jam like raspberry
topping
Make Italian meringue cook to 121oc
pipe on and blow torch
