- 1 litre double cream
- 250g caster sugar
- 6 leaves gelatine soaked
- 1 litre passion fruit puree

recipe for a lovely light passionfruit cheesecake
Ingredients
Method
mix butter and digestives together. Press into rings and set.
Whip Philadelphia and vanilla and sugar until thick.
Warm passion juice add the gelatine and cool.
Whisk into the Philadelphia
Whip the double cream and fold in
Pour into ring and set.
Cover with passion fruit jelly.
