in a pan warm up the pea puree, agar and gellan stir to boil and remove add gelatine and stir, strain through a fine sieve.
on a warm tray place some pea micture and smooth out to create an even layer, lightly oil surface and cover with greaseproof, remove and chill
nb, you have to work fast as the mix cools it will harden
