- 8tablespoons peanuts, blitzed to a paste (or peanut butter)
- 1 finely chopped shallot
- 2 stems of lemongrass
- 285ml coconut milk
- 1red chilli, sliced
- 1tablespoon muscavado sugar
- 1tablespoon fish sauce
- Juice of 1 lime
- Handfull chopped coriander

Peanut dipping sauce
Aromatic sauce, for dipping crudités or deep fried items.
Ingredients
Method
Mix all the ingredients in the first list, and cook out over a low heat until thick.
Remove from heat and cool. Add second list of ingredients, and check seasoning, adding more fish sauce if needed.
