Peanut dipping sauce

Aromatic sauce, for dipping crudités or deep fried items.

Ingredients

  • 8tablespoons peanuts, blitzed to a paste (or peanut butter)
  • 1 finely chopped shallot
  • 2 stems of lemongrass
  • 285ml coconut milk
  • 1red chilli, sliced
  • 1tablespoon muscavado sugar
  • 1tablespoon fish sauce
  • Juice of 1 lime
  • Handfull chopped coriander

Method

Mix all the ingredients in the first list, and cook out over a low heat until thick.
Remove from heat and cool. Add second list of ingredients, and check seasoning, adding more fish sauce if needed.
