Pecan and bacon brittle

Interesting savoury/sweet nougatine like brittle.

Ingredients

  • 90g granulated sugar (A)
  • 45g muscavado sugar (A)
  • 100g liquid glucose (A)
  • 70g water (A)
  • 10g unsalted butter (B)
  • 4g baking powder (B)
  • 0.5g halon mon smoked salt (B)
  • 150g crushed pecans (b)
  • 150g smoked bacon (cooked, rendered and drained, then finely chopped) (B)

Method

Combine (A), cook to 140C, remove from heat and add (B). Rapidly stir to combine.
Pouronto a silpat, cover with a second silpat and roll while still warm to a thin uniform thickness. Warm through a gentle oven if it sets before you achieve the desired thickness. Cool and break into shards.
