  • 900g 64% dark chocolate
  • 60g soft butter
  • 16 egg yolks
  • 600ml double cream
  • 600ml milk
  • 200g caster sugar

Method

melt chocolate, add the butter and egg yolks
Boil cream and milk pour onto chocolate and mix
pour into espresso cups chill 1 hour
Serve with crème fraiche
