Pickled herrings

Light pickle, good after 6hours, last up to 4days. Best at 24hours in my opinion


  • 8 large herring, filleted. A
  • 150ml spirit vinegar or white wine vinegar. B
  • 200g sugar. B
  • 300ml water. C
  • 200g sliced leeks. D
  • 2sliced red onions. D
  • 4bay leaves. D
  • 20cracked black peppercorns. D


Fillet (A) and remove pin bones. Bring (B) to a simmer, add (C). Cool completely. Layer in a small deep tray/container, alternating between (A) and (D), pouring the cooled (A&B)! As you go. Place into the fridge and leave for at least 6hrs. Serve with creme fraiche, crostini and vodka!
