Toast pistachios and set aside.
Whisk ..


  • 12 sheets rice paper
  • 6 egg whites
  • 750g pistachios
  • 800g caster sugar
  • 200g honey
  • 400g liquid glucose

Toast pistachios and set aside.
Whisk egg whites to soft peaks
Cook sugar, honey and glucose to 142oc.
Whisk onto egg whites and whip until cold.
Fold in pistachios and quickly spread over tray.
Press the other 6 sheets of rice paper on.
Cool to room temp and refrigerate,
Cut as desired.
