Cook the rice, milk, sugar, vanilla and cinnamon in a pan until soft around 35mins.
Whisk together the egg yolks glucose and add to the rice pudding mix and cook for 2 mins until it reaches 80oc. Add in the clotted cream.
Puree lightly with a hand blender until half the mix smooth and also some of the lumps still left. Allow to cool, churn in machine and freeze until desired consistency.
