great curing salt for meat or fish

Ingredients

  • 1kg salt
  • 100g toasted coriander seeds
  • 11g mashed garlic
  • 7g star anise, crushed
  • 5g orange zest
  • 2g thyme leaves
  • 0.8g black peppercorns
  • 0.4g bay leaves, sliced

Method

combine all ingredients
vacuum seal
refrigerate
