  • 2.7kg damsons
  • 300g caster sugar
  • Topping
  • 675g self raising flour
  • 6tspb baking powder
  • a pinch of salt
  • 300g caster sugar plus 1 tablespoon
  • 225g chilled butter
  • 3 medium eggs
  • 360ml buttermilk 45g flaked almonds

Method

Place damsons in the tray sprinkle over with sugar.
Mix the flour, baking powder, salt, sugar, and butter to breadcrumbs.
Beat eggs and buttermilk together.
Mix in to a soft dough, roll out pieces and dot over the damsons.
Sprinkle with the almonds and remaining sugar.
Bake for 30-35 mins.
Remove and cool slightly.
