Ingredients

  • 125 grams Foie gras
  • 125 grams Milk
  • 125 grams double cream
  • 1 Egg
  • Salt
  • pepper

Method

Boil the cream and the milk, than add the foie gras.
Cook on a low heat for about 30 minutes, mix than pass through a strainer.
Beat the egg and pour it into the mixture of milk/cream/“foie gras”.
Blend and pass through a strainer again.
Add salt and pepper.
Fill into small containers or egg shell place in a “bain Marie” in the oven at 190°C for 30 minutes until just set
