goats cheese foam

great as canape or part off a dish

Ingredients

  • 250 g goat cheese (with herbs works well also)
  • - 125 g sour cream
  • - 125 ml double cream
  • - 1.5 tbsp olive oil
  • - salt and pepper

Method

1- Blend goat cheese, olive oil, sour cream and seasoning in a blender or food processor. When seasoning,
( keep in mind that the mix will expand so adjust accordingly)
2- Pass mixture through a tamis.
3- Add double cream and mix.
4- Pour the mixture into an whipper, (2 chargers if using 1L whipper) and shake vigorously.
5- Refrigerate for at least 1 hour.
