Ingredients

  • 1 whole pork belly, boned, rolled and tied
  • roughly chopped carrots, leek, onion, fennel
  • thyme
  • garlic
  • salt
  • peppercorns

Method

Place the pork in a roasting tray with all the aromatics and cover half the pork with water. Slow cook at 150°C for 6-8 hours - crisp up the crackling by turning up the oven or grilling.
