Tex Mex Chilli with Sweet Potato Fries

Serves 10 people.
We recommend serving in separate bowls on a tray or plate and add a green salad for an even more vibrant dish.

Ingredients

  • • 2.5 kg beef brisket, cut into 1 inch cubes
  • • 2 cups yellow onion, chopped
  • • olive oil
  • • 6 cloves garlic, crushed
  • • 2 tbs chilli powder
  • • 1 tbs chilli flakes, crushed
  • • 2 tbs ground cumin
  • • 1 tbs cayenne
  • • 2 green peppers, seeded and diced
  • • 1 bay leaf
  • • 6 cups chopped tomatoes, with their liquid
  • • salt and black pepper
  • • 1/2 cup strong coffee
  • • 2 cans kidney beans
  • • 2 tbs basil, chopped
  • • 1.5 kg Aviko Sweet Potato Fries

Method

Heat the oil in a large, heavy based pan and quickly brown the meat (in batches). Transfer to a separate bowl, set aside.

Saute the garlic and onion in the same oil until soft.

Add the green peppers, tomatoes, meat and spices. Bring to the boil.

Reduce the heat, cover and simmer for 2.5 hours, stirring occasionally.

Add the beans and basil, heat through.

Fry the Aviko Sweet Potato Fries, following the instructions on-pack.
