- 400g dark chocolate
- 325g cream
- 200g milk chocolate
- 40 invert sugar
- 50g unsalted butter
- 1 vanilla pod
- 1 kg pre-crystalised dark chocolate for dipping
- 500g cocoa powder

vanilla chocolate truffles
perfect with coffee, makes about 50 small truffles
Ingredients
Method
melt the dark and milk chocolate together
bring the cream and vanilla to the boil
pour cream onto chocolate and add sugar
beat in butter when cold
pipe the truffles onto paper, leave to harden in a fridge
dip the chocolate into the pre-crystalised chocolate, shake off excess
roll in cocoa powder
