Abergavenny Goat cheese, Beetroot and fermented seeds.

Our job is to extract as many layers of flavours and texture possible from an ingredient and not only making fancy riffs on food. From our side there is much joy in taking a simple ingredient and applying
high-end techniques to them, like this goat cheese, beet-root, squash and seeds.
The vegetables part of this dish, comes directly from our greenhouse, the cheese! Not far, Abergavenny, we like to keep it, near and organic .
We wanted to make the cheese the star though ,
so we gave it a royal technicals treatment,
of course we kept some cheese,fresh
then some freeze -dried.
