- 1tbsp Knorr Jamaican Jerk Paste
- 2 cloves Garlic Loose
- 1/2 Red Peppers 70-90mm
- 1/2 Yellow Peppers 70-90mm
- 1/2 Green Peppers 70-90mm
- 1/2 Onion Large
- 4 Spring Onion Trimmed..
- 400g Everyday Favourites Chopped Tomatoes
- 100g Mango
Ingredients
Method
1) Brush the swordfish steaks with the olive oil and sprinkle with jerk seasoning and a little salt. Leave to marinade for at least two hours
2) Fry the onions in the olive oil with the peeled and chopped garlic and peppers for approximately 10 minutes
3) Add the jerk seasoning and continue to fry for a few minutes, add the chopped tomatoes including the juice. Add the peeled and chopped mango and jerk paste
4) Season and simmer for 10-15 minutes
5) Meanwhile BBQ or griddle the swordfish on high heat for 2-3 minutes each side, no longer
6) Serve the swordfish with the sauce and boiled rice
