Sri Lankan Vegetable Curry

A delicious vegan curry recipe using our brand new Sri Lankan Pan-Asian Base Paste


  • Vegetable Oil - 60ml
  • Onions (diced) - 450g
  • Cauliflower Florets - 600g
  • Butternut Squash (diced) - 600g
  • Rubber Beans (cut diagonally & blanched) - 300g
  • Okra (cut diagonally & blanched) - 300g
  • Major Sri Lankan Pan-Asian Base Paste - 360g
  • Coconut Milk - 600ml
  • Major Vegetable Stock Base Powder (made up) - 1800ml
  • Tinned Chopped Tomatoes - 400g


1. Heat the oil in a pan and add the onions. Fry until golden.
2. Add the Major Sri Lankan Pan-Asian Base Paste.
3. Add the coconut milk and Major Vegetable Stock Base Powder.
4. Add the butternut squash and cauliflower.
5. Add the beans and okra, simmer until tender. Serve.
Top Tip: Serve with Sri Lankan Chickpea Dhal and Fresh Tomato and Red Onion Chutney for an authentic feel.
