Toffee Apple Cheesecake

Today's fortified recipe for #FortificationWeek is a gorgeous Toffee Apple Cheesecake. Full of flavour and perfect for both winter and Christmas.


  • 100g Everyday Favourites Digestive Biscuits
  • 200ml Arla UHT Milk
  • 100g Everyday Favourites Salted Butter
  • 100g Everyday Favourites Clear Blossom Honey
  • 400g Luxury Full Fat Soft Cheese
  • 100g Bramley Apple Fruit Topping & Pie Filling
  • 100g Carnation Caramel Condensed Milk
  • 100g Millac Gold Cream


1) Place biscuits in a blender and crush the biscuits until a fine crumb.
2) Heat the milk, butter and honey in a pan until it is dissolved then add to the biscuit mix and blend together.
3) Pass all the ingredients through a sieve to ensure there are no lumps then place the biscuit mix into glasses then refrigerate until set.
4) In a bowl place the cream cheese.
5) Then blend all the apple pie filling down and pass through a sieve into the same bowl as the cream cheese and fold together.
6) Then fold through the carnation caramel.
7) Gently whip the double cream and fold through the mix. Once all folded together, place on top of biscuit mix and refrigerate until set.
