chocolate souffle

Classic choco souffle serves 4.


  • 1 tbsp c sugar( for dusting dishes)
  • 50g butter
  • 1 tbspn plain flour
  • 200g dark chocolate
  • 2 yolks
  • 4 egg whites
  • 55g sugar (extra)


Grease 180ml souffle cups or straight edged ramkins and grease up the way.
Sprinkle with sugar and put aside.
Melt butter add flour cook out cpl mins, stir in melted chocolate and egg yolks, keep slightly warm.
Beat egg whites until soft peaks grad add sugar spoon at time fold in egg mixture in three batches to choc mix.
Divide mixture between ramkins, smooth surface, wipe round edges.
Bake middle shelf at 200oc gsmark gs 6 for about 15 mins
