  • 15 egg yolks
  • 115g sugar
  • 115g trimoline
  • 1 vanilla pod
  • 900g clotted cream

Method

Boil milk and vanilla
Whisk egg yolks, sugar and trimoline
Make as anglaise
Whisk in clotted cream, pass, chill and churn
