beat egg yolks with 2/3 sugar

Ingredients

  • 4 eggs
  • 110g caster sugar
  • 110g flour
  • vanilla to taste
  • 50g icing sugar

Method

pre heat oven to 220'C
separate eggs and place in bowls
beat egg yolks with 2/3 sugar
whip egg whites with rest of sugar
fold 1/3 egg whites into egg yolks
fold in rest of egg white
add flour until smooth
pipe onto baking sheet 10cm long
dust with icing sugar
bake for 10 mins
cool on a rack
